Successful smoke but a small issue with the grease from the ribs . Created a grease fire and charred a few racks. Otherwise the ribs were pretty good. We separated the good ribs from the charred ones.

I didn’t use the water pan at the recommendation of some of the guys on a fb group. I don’t think I’ll take that advice again.
