My wife loves apples and Brie so I thought I would come up with something for her.

Prosciutto wrapped Apple and Brie smoked sausage.

This is a recipe a came up with because of wife's love of apples and brie. 

1 pound ground beef or pork (I used beef but pork would be great)
2 teaspoons of BBQ rub (I use Billbos)
2 teaspoons house seasoning (I will post the recipe soon)
1/4 teaspoon nutmeg
1/2 teaspoon sage
4 oz package of Brie cheese cubed into small cubes (haveing the cheese VERY cold helps)
1/2 cup diced granny smith apple
8 slices thinly sliced Prosciutto (Bacon would be good too)

Combine all ingredients in a bowl and mix well by hand. Put in the fridge to rest at least 1/2 hour. Portion out into 8 equal portions (this does not need to be exact) wrap in the Prosciutto and pin with a tooth pick. Smoke with your favorite wood at 235 about 1.5 hours till and internal temp of 160.
