So my chargriller 5050 mos my smoker
I know it's is far from the best . But it is what I have now . I have done all the mods. Extension of the stack convection plate , fire bricks. It works good but maintaining the temp , even with my pit master 120 is hard going into the 8 th hour
I have everything I need to put in a propane burner . But I think it is the cowards way out..
What do you think?
 
Cowards way out? Says who!? I would not hesitate to go gas if it made my life easier...JJ

Smoking isn't about who can do the best with the worst conditions and it sure isn't a test of manhood. It's about turning out good/great food, having fun doing it, and making people happy when they eat it. If you can find a way to make the process more enjoyable then jump all over it.
