I never heard of packing it in salt. What is the reasoning behind this method? Does it taste salty?

It makes a super awesome hunk of prime rib that's the reason!

Actually the concept is the salt locks in the juices and you can cook the roast without drying it out.

So if you have inlaws that like ober well done, it will still be nice and moist.

With that said even at the other end it's a great way to go.

No it's not salty. Unless you dig a spoonful of salt out and eat it!
