I plan to smoke a PR tomorrow and wanted to know the thoughts on when to put the rub on?  Today or tomorrow two hours or so before I smoke it?  I plan to use herb paste of chopped garlic, fresh basil, oregano, parsley, rosemary, EVOO, salt and pepper blended into a paste and apply.

Thanks

Rub sounds good. You can put it on a few hours before.

The only thing I would caution on is the letting the meat warm up before placing into the smoker. You still have to be careful with the TDZ. Bring to an internal temp of 130 degrees (for rare) and allow to rest for at least 45 min. 121 min would be best.

Ok. I cooked my first Prime Rib today.  It turned out perfect!!!  Best some so far.   I took everyone's advise and cooked to med rare, used 3-4 chunks of apple wood.    I could have had a little more smoke ring to my liking but my wife loved it

Placed in the smoker at 325 degrees

Used 4 mid size chunks of apple during the smoke.

Cooked at 235 for 2 1/2 hours

5 lb prime rib

Pulled off at 115 degrees.

rest for 30 minutes

Nice med rare
