Prime rib for Xmas need suggestion for veggie side

All,

I am making prime rib for Xmas dinner and I am looking for something other than the same old, same old, side dishes.

Right now, all I got is prime rib and twice baked potatoes. Simply drawing a blank for another vegetable side.

Any ideas from the forum would be greatly appreciated.

Spinach Maria! Best I understand it originated at a BBQ restaurant here in Knoxville several years ago named Calhouns. One of my favorites and a big hit every time a make it! Credit to them for the recipe.

5 10-oz packages frozen chopped spinach
4 1/2 cups Milk
1 teaspoon Dry mustard
1 teaspoon Granulated garlic
1 3/4 teaspoon Crushed red pepper
1/2 medium Yellow onion
1 tablespoon Butter
5 tbsp butter ; melted
6 tbsp flour
8 oz Velveeta
8 oz cheddar cheese
4 oz Monterey jack
1 1/2 cup Monterey jack ; (for topping) grated
Thaw spinach in refrigerator for 24 hours. Squeeze as dry as possible. Heat milk and spices on medium heat to just below a boil (190 deg.) Reduce heat and simmer. Finely chop the onion and saute it in 1 Tablespoon butter on med. heat 5 to 8 minutes. Add to milk. Combine melted butter w/ flour in sm. saute pan. Mix until completely blended. Cook on low heat 3 to 4 minutes to make roux. Add roux to milk; mix well. Cook until sauce thickens. Cut cheeses into cubes and add to milk. Mix until cheese melts. (Be careful! Burns easily!) Remove from heat. Allow to cool 15 minutes. Add drained spinach to cheese sauce, mix until completely blended. Spoon into 11x9x2-inch dish. Top with grated Jack. Bake at 350 deg. F for 15-20 minutes until hot and bubbly.
 
My mother in law makes an aspearigus casserole thats real good. Has a cream sauce and sliced boiled eggs in it and a bread crumb topping. If you Google "creamy fresh aspearigus casserole" it will come up. Its the one from food .com. Its good and something different for a change
 
Not sure if you consider it 'same old", but Creamed Spinach is a classic

Creamed Spinach
INGREDIENTS
• 3 tablespoons unsalted butter
• 2 medium shallots, finely minced (about 1/2 cup)
• 2 medium cloves garlic, minced or grated on a Microplane (about 2 teaspoons)
• 2 pounds curly spinach, trimmed, washed, and drained
• 1 tablespoon all-purpose flour
• 1 1/2 cups heavy cream
• 1/2 cup whole milk
• 1/4 teaspoon freshly grated nutmeg
• 1/4 cup store-bought or homemade crème fraîche
• Kosher salt and freshly ground black pepper
• 2 ounces Parmigiano-Reggiano, finely grated (about 1 cup; optional)


DIRECTIONS
1. Melt the butter in a Dutch oven or large saucepan over medium-high heat. Add the shallots and garlic and cook, stirring, until softened, about 2 minutes. Add the spinach in four batches, turning each batch with tongs or a rubber spatula and allowing it to wilt before adding the next.
2. Add the flour and cook, stirring constantly, until no dry flour remains. Slowly stir in the heavy cream and milk. Bring to a simmer, stirring, then reduce the heat to the lowest possible setting and cook, stirring occasionally, until the spinach is completely softened and the sauce has thickened, about 1 1/2 hours.
3. Stir in the nutmeg and crème fraîche and season to taste with salt and pepper. Remove from the heat.
4. If desired, preheat the broiler to high. Transfer the creamed spinach to a 1-quart oval or round casserole dish and top it with the cheese. Broil until the spinach is bubbly and the cheese has formed a well-browned crust, about 2 minutes. Serve.

Take a bunch of asparagus and put it into a ziplock bag with a bottle of Italian dressing. Let it hang in the fridge for a couple of hours, and then onto the grill.

SmokinVOLfan SmokinVOLfan . Suggested this to me a while back for a Thanksgiving side. I didn't use it for thanksgiving but I did make it a home one night to go along with some half chickens .I actually put it in a foil pan and put it in the smoker. It was fantastic. Great side dish!
 
Brussel Sprouts with bacon is always mmmm.

Cheesy Corn
-----------------
3lbs Frozen Corn
6oz Cream Cheese
1/2 Stick melted butter
20oz Canned Nacho Cheese
Rub of your choice

Mix it all together, put it into a greased 9x13 and bake at 375 for 45ish minutes. Depending on how you want the consistency you can go a little longer. This is one of the dishes I offer for catering and seems to be a hit so far.

I usually do them in a foil pan too. Makes for a great dip with tortilla chips too!

This is a Holiday favorite. We use a Whole Pound of Velveeta and Frozen mixed Broccoli and Cauliflower. ..JJ
