i am going to be smoking a bone in prime rib for Christmas, but I have never smoked one whole ( only 1-2 steaks) anything special I need to know, what size is good for 10 people?
How long for a med. rare. Any advice I could get would be great. Thanks.
 
As said above there are a million threads on PR on here. But basically you want to cook it to temp, med/rare would be about 135. So you would want to pull it out of the smoker at about 130 & a 15-20 minute rest with the carryover cooking will bring it up to 135. For 10 people I would suggest a 4 bone roast. If you have the chance to get it from a butcher ask for the 4 bones on the end closest to the loin. At 225 your probably looking at 3 to 4 hours cook time.
