Get the Apera that 73saint is getting.....reasonably priced, functional, and it is bluetooth capable as well...has an alarm feature for when target pH is reached. And you can check the slope to verify accuracy.

How you getting that much drainage? I dont get any. I must be missing something.
I filled the chamber up with 30-35# of meat. That will produce quite a bit of water while drying to 45% weight loss.

For example, 30# of meat drying to 45% weight loss will produce 13.5 pounds of water, and 1 gallon of water weighs 8.35 pounds so.....

When I pulled the sticks from the smokehouse they had already lost about 15%...
 
My data logger says my average temp is 50.7 and avg humidity 80.3. That’s the average since Friday, sound ok or should I adjust?
 
If the avg. temp is 50.7*F, then you are getting temps. lower than that....what is the lowest temp registered? And do you know the temp at the top and bottom of your chamber?
 
49.3 is my minimum and I have several thermos throughout. It’s pretty accurate.
 
Gotcha...
Is your humidity dropping when refrigerator is on a cooling cycle? If not, and it's staying within target, You could bump the temp up a degree or two to keep the chamber between 51-55*F.
