Precut beef ribs

Got some beef ribs and they came precut already. Was planning on trying the 3-2-1 method but am worried these are to small and would become overcooked. This is my 1st time trying ribs. Anyone ever smoke ribs cut up this small? The wife said the butcher called them beef spare ribs.

B, morning and welcome to the forum....   Those ribs will take up smoke pretty easy and fast due to the surface area...  I would go easy on the smoke time...  Season as you would normally and cook to an IT (internal temp) of 190 ish....  The meat should start pulling back from the bone when they are done...   Dave
 
They ended up going 2 - 1.5 - 0.5 by that time they were at 195 internal so i took them out. Used Hickory for the 2 hour smoke they got.


Also got one of those 5 gallon newbie beer making kit for Xmas with an Oktoberfest kit.  Time to crack the seal on a possible new hobby.
