Saw some of these the other day when I was looking at my suppliers list for some beef ribs for smoking.

Anyone ever smoked these things up?

Never heard of it til now . Had to look it up . Says by product from triming bone in ribeyes .
So strips from around the rib bone .
I'd be all over those if the price was right . I did see them listed at Gordens food service where I buy 90% of meat . I'll have to ask .
 
I also googled it but will ask the rep come Monday.
I got 2 different results in my search.

I think there's 2 options ,
Trim from french / cleaning the bones on bone in ribeyes , and the leftover trim from boneless ribeyes , longer strips .
That's just my take on it , as I looked it up .
If the price was right I get some for sure . Hot and fast , like a steak .

I too had to google to see what this was all about.

If I saw them at a store I would surely give them a rip. Sound tasty.
