pre cuting and freezing jerky strips

i found a good price on some eye of round that i wouold like to make into jerky but my sesoning won't be here until the 28 of dec i was wondering if i could cut the meat into strips now then freeze it until next week when i can start making jerky

I really don't know the answer but I don't see why not. I'd like to head what others think.

I can't think of any reasons it wouldn't work.

I do it every year with venison.

I have done what you are asking several times with no ill effects.

I like doing it this way just to break up work into seperate times.
