Pre cook ribs day before finish oven or grill next day

I have to smoke alot of ribs for a cook out at our local legion. I usually cook ribs at 275 for about 4 hrs. To save time I was going to pre cook them the day before 275F for about 3 hours and make sure they are at least 165F IT. The next day I was going to finish them off either in an oven or back on the grill until they are probe tender (almost fall off the bone). I have never done this do you think it will work?
 
I may even go a bit longer. So all you have to do is to reheat on the grill. Depending on how many you need to cook. Once cool, you could wrap in foil for the next day. Warm in the oven or grill. Remove the foil and sauce and onto a hot grill to set the sauce. Reheating on the grill taste as good or better than the 1st day. Many restaurants do the same.

I agree. I'd pre-cook then wrap in foil. If you don't want FOTB ribs, maybe unwrap and throw back on a hot grill to warm and then sauce. If you choose to wrap and don't allow them to cool first, I think you'll end up with FOTB ribs. My 2¢...

I usually smoke my ribs until done a day or 3 before, then heat in oven at 250 in covered pan with a little water or apple juice for about an hour.
