Figure on 2 hrs per # and you want at least a 30 min rest to redistribute the juices.  Wrap in foil then wrap in towels to retain heat

Well, I finally finished the cook about 2AM.  The 150d hump took for freakin EVER!  Lucky my thermometer has an alarm.  I put the last of my wood on around midnight and went to sleep on the couch.  The alarm woke me up when the pork reached IT of 200.  I wrapped it and put it in the cooler till morning.  When I went to pull it before church, it was still pretty hot, no need to re-heat :)

It was a hit.  Juicy, smokey, lots of bark.  When I pulled it, I added a touch of the rub in with it and mixed by hand.  Made for a nice finish.

Next time, I think instead of just water in the smoker, I'm going to use some apple cider vinegar and / or some hard apple cider.  Thoughts?

Sry, no pics of the finished product.  I plain forgot!
