Did a little research. Potato Flour and Plain Instant Mash Potato Flakes are made in virtually the same way. Both are cooked Potatoes that are dried. Flour is ground fine and the other is Flaked for easy reconstitution. Potato Flakes are cheap and frequently on sale. They make a great Fried Chicken Breading for the Gluten Free crowd. Tastes like eating chicken and potato chips together...JJ
