I am addicted to this Porketta seasoning. I finally found some in my local grocery store the other week so I had to pick up a pork roast and make one. I cut the roast open and seasoned it all up then rolled it up and tied it. I put a little beef broth and onions in the bottom and baked it at 350 until it hit 150. Next time this baby is going into the smoker for sure! I can't wait to try it.

Cut open and rubbed down.

Here is one recipe I found on line. I was going to make a batch but I found a seasoning at my local store so I have been using that. I love it. I may put a little more fennel seed in the mix I have since I love fennel.


1 teaspoon crushed Fennel Seed
2 teaspoons dehydrated Onion Flakes, crushed
1/2 teaspoon dried Rosemary, crushed
1/4 teaspoon dried Oregano Leaves, crushed
1 teaspoon Salt
1/2 teaspoon Coarsely Ground Black Pepper
1 teaspoon Garlic Powder
1 teaspoon dry Barbecue Seasoning
 
Interesting.
I'll have to make a batch and give it a try.

Here is another one I found. I am not sure which one would be better to try.


Porketta Seasoning

4-5 lb. boneless pork butt
2 tsp. fennel seed
2 tsp. salt
2 tsp. pepper
2 tsp. rosemary
2 tsp. oregano
2 tsp. parsley flake
2 tsp. celery flake
2 tsp. basil
1 tsp. garlic salt
1 tsp. onion salt
Mix all ingredients together and cover pork, that has been butterflied and laid flat, on both sides generously with the seasoning.
