Has anyone left a digital thermometer in a pork shoulder after it has been placed in a cooler? Lets say the pork shoulder was placed into the cooler at 205, how long would it stay that high and what would be the temperature range the meat would likely spend the most time at before it really started to cool?

I don't know what the temp is, but a pork butt wrapped in towels left in a cooler for several hours is still hot enough to make for some uncomfortable pulling ....... It's still hot enough to burn you at this point.
 
I haven't done a whole butt in years. It was not an insulated wrapped to rest. It was a table top rest and it took hours to cool down enough to pull.
Got smarter these days and only do smaller pieces of boneless butt for pulled pork.
I also use cheap Harbor Freight gloves under the nitryl gloves to insulate my fingers.
