Good Morning!

Quick Question,

What exactly are pork side ribs and can you use the 3-2-1 meathod? I have heard of spare ribs and baby back, and for one of them, you are supposed to do 2-2-1 or else they will be over cooked. Thoughts?

Try cooking them to internal temp.
195 for juicy, but not quite fall off the bone.
200-205 for fall off the bone.

Side ribs usually aren't real meaty. They come from an area closer to the belly. You will probably have to do the bend test to tell when they're done, or as Al mentioned cook to temp if you have a thermometer that can get in-between the ribs.
