Here’s an 11 Lb shoulder I smoked on Thanksgiving on the kettle.Marinated with Cuban style seasoning.Wrapped at at 170.

Hickory.Very nice feast of pork for your thanksgiving. I love the flavour when cooking in a Weber kettle. I gave mine to a friend and sort of regret it after seeing your post.
Great colour, what wood did you throw in?
My wife has tried to a couple of times but it doesn’t come out the same.That looks fantastic.
Have you thought about making your own Cuban bread.
I don’t think it would be too hard to make!
