I was attempting bearcarvers pork jerky last week and got rained out . So after marinating I rinsed and froze it . A week later it's on the smoker . I did make a couple changes to the recipe. White pepper instead of cayenne and I used coffee instead of wine . Since I had neither in my pantry. Smelled fantastic. Then the last time I made jerky I smoked a couple large sweet onions to add to recipes for a touch of smoke..wow what a difference they make in a roast or soup . It's like night and day . So 2 more onions went on the smoker today also.

Looks good. I’ve tasted some pretty good bbq pork jerky before. I’ll have to try smoking a few while onions, may do a whole rack.
 
I should of done a whole rack. But getting towards holiday season and I want to do a ton of summer sausage to hand out. Waiting for a good price on bulk ground beef. Plus deer seasons only a few weeks away . I think something will be getting smoked shortly.
 
Almost there impatiently waiting .put on some chicken breast to get some smokiness before I put them on the foreman for some sliced chicken on salad for dinner tonite.

Finally done. Not as good as my beef jerky but tasty all the same. Onions are a little lighter than last time but they are also bigger. I'm sure they will compliment whatever I use them in without firing up the smoker.
