was in my back pocket at Costco the other day....that or I was in his cause we both got the same basket with two boneless pork butts in it!
So for starters what a great day for a long smoke....... the Memphis Pellet is going to have it’s worth it moment today!
What a couple of nice looking butts..... just don’t say that out loud while in the Costco line to pay..... you might loose your membership!
Each butt was fat trimmed, scored, and seasoned with a sprinkle of kosher salt, stone ground mustard, and big bald BBQ from Jeff’s book. I was lazy and put a couple of skewers vs string to hold them together.
on they go! Going to run this smoke at 265 cause I slept in.
IT 163 and 159....time to wrap... butt (he he) this time both went in a large triple layer covered foil pan.... again being a bit lazy.
Just a closeup on the crust.....the boy and me almost cut off the top inch of each for a snack! A couple of diamond squares were consumed though!
Bumped the temp up to 275 now that they are in a pan....the taste test made us hungry.....
The plan for these is chili verde, pulled pork, and something else special that will be its own thread..... it’s a secret that will have to wait..... a new creation to bbq elegance. I just hope I didn’t jinx it......
