5 lbs of pork leftover after slicing some steaks,. Hot sauce and fajita seasoning on the smoker to pull and make tacos. also put on some baloney and jalapeños poppers.

Off to a great start.
I do that with left over butt after taking cuts, too.
 
We do a ton of pulled pork tacos like this. I make lots of pork and then vac seal in 12oz, 1lb or 2lb bags. Pull out of the freezer, nuke for a minute or two, swap into a bowl/container, add something like some meat church fajita seasoning and heat the rest of the way. Makes awesome tacos, enchies, quesadillas, flautas, etc. Good stuff!
 
Looking good! I like the way you cut the bologna down to get more smoke coverage.
