Just found one in the freezer with 11/21 date still in cryovac. Should I chuck it, cook it, or grind it up for sausage?
 
It’s still perfect. But once thawed and removed from vac look it over good for freezer burn. Simply skin any and all of that off if any and roll it in smoke. Probably be the most tender PP you have had in a while.

LoL I bought this in a BOGO sale and it got put in a freezer that I don't usually use.
 
The USDA says that meats are good as in safe indefinitely if they remain frozen. They footnote it with quality can degrade.
So does that mean a fresh pork butt would be better for sausage?

It says " can degrade" When it's sealed well I see no quality issues. Sausage us likely a perfect use for it in my opinion.
