Decided to try these on a recent cook. I sliced pork belly lengthwise in 1 1/2 inch wide pieces. The thick pieces were tough to roll and skewer. I would butterfly those pieces next time. I sprinkled them with my Rib Rub and some Kosmos Killer Honey Bee rub. I was planning on taking these to our Family beach trip a few weeks off. I vac packed them and froze until the cook.
Defrosted and rolled them up on skewers, gave them a good dose of rub again.
Cooked until 190F, gave them a coating of sauce. Montgomery Inn, sweet, sweet. Watched until 200F+ and probe tender. Careful not to burn sauce.
Into double foil to rest, big pat of butter and more sauce. After cooling, froze again foil and all.
Defrost or not, pop foil into air fryer 12 minutes @ 380F ( longer if frozen) Use a sharp knife to slice and use tooth picks for serving. Family devoured them. Definitely on my easy go to list. Thanks for looking.
