Today when I put beautiful, golden crunchy edges on both sides of the last slice.
A CI pan with butter performed the last rites and I partook with a sorrowful heart but a songful tongue.
It about made me cry too.

I was wondering what to do with the thin pork bellies I got with a pig we bought, May have to try this. It is skin less though.
 
Looks great. I made one like that and my crew turned their noses up. TOO Fatty, they said. Next time I used the biggest Picnic Shoulder I could find and everyone was happy. Plenty of lean juicy meat and fatty meat for those that like it, Me! Cracklin Skin too...JJ

That's a good option to use, especially for those who can't source skin-on pork belly.
I've a few that are picky about fat, I tell them to take the time to trim it and find all those succulent strips of meat hidden in that pork belly.

Well Chile, I stand with my nose in the corner. I read this and believe I had to get out the door for work and never got back to replying. I was totally blown away when I saw this. Done a few roll-ups, and made Panchetta but this is simply amazing my friend. That sliced shot is pure money. I do recall thinking when I read the post that I may just have to make this at some point. After seeing what you did, I don't believe it'd be any more of a PITA than some of the other oddball things I've done. The exception being that this is in no way an oddball creation: it is a true masterpiece.

Wow...just plain WOW!!
