Was in Costco the other day and saw chuck roasts marked down by $8, so picked up a couple.
Today decided to cook one like a brisket. Smoke tube with Pecan pellets to start cook. Only smoke for a couple hours, then cooker set at LO (temp ~ 180℉) until 140℉ internal, then temp setting increased 10 degrees each hour until 300℉. Pan covered, tallow added at 160℉.
Roast pulled at 202℉, rested and then sliced. Coulda' sliced with butter knife, texture and taste exactly like brisket.
Have been reading about Pecan Shell pellets - gonna have to give them a try. Have been ignoring them because of price ($33 for 20#) A bit steep for retired guy, but........

Chuck is 10 bucks a pound here . Brisket has snuck up tp $6.00 .

I've been watching prices and often chuck is a better buy when one considers the fat trim off the brisket.

Yeah, I've been craving beef lately and have been looking at briskets so much that I'm going out of my way to stop in walmart. One had a pair marked down to 4.99/lb but the fat cap was stupid thick and the flat under it was stupid thin, no wonder nobody bought them. I got 2 chucks at food lion Saturday and will roll with those. They were 5.99 lb, marbled nice and no trim needed. It ain't the same but it's damn close and I don't have to spend 90 or a hundred bucks, only about $38.

Wow, I haven't seen $5.99/lb chuck in a while, maybe a couple of years - even at Sam's and Costco. Around here $6.99 is probably the lowest I've seen it, more often $7.99-9.99. It's just unreal.
 
Good looking chuck! Yea... Chuck roast is now more expensive than brisket down here. Looking at $13.99-16.99/lb. I need to check our Costco, but I have a hunch it's the same there too. Last I saw, our brisket was $7/lb.
 
Very nice roast! Yeah, meat is up there in price here too.
