Here's a soup recipe that I've been meaning to try, I know it sounds odd but it actually tastes pretty good! I had a simple recipe written down but when I went to google it, there were quite a few of them out there. The recipe from the Nobel Pig stuck with me and I loosely based it on theirs. When I told the wife I was making this, she wrinkled her nose up at the thought of it, so I waited until I was making dinner for myself. She did have a bowl when she came home from her appointment, much to her surprise she enjoyed it.
Polish Pickle Soup
5 cups of Chicken Broth
3 carrots grated
1 medium onion diced
3 or 4 cups of peeled cubed potatoes (I just used what remaining red potatoes I had on hand)
1 cup of chopped dill pickles
1 cup of sour cream
1 1/4 cups pickle juice
1/4 cup flour
1.5tsp Old Bay seasoning
1 tsp. black pepper
1/4 tsp. cayenne pepper
Butter
Start off by mixing 1/4 cup of flour with a 1/4 cup of pickle juice. Mix to break any lumps in the flour.
Add in 1 cup of sour cream, stir and set aside. This will be added to the soup at the end.
Here's the rest of the ingredients. This is a quick soup. The whole thing took less than 45 minutes from start to finish.
Melt butter in a stock pot and add the carrots and onion. Sauté until onions/carrots are somewhat soft, about 4 minutes. Then add the chopped pickles and cook for another 2 minutes.
Add your potatoes and chicken broth. Bring to a boil then turn your heat down to medium and cook until potatoes are tender. This took me 15 minutes.
After potatoes are tender turn heat down to medium-low and whisk in the sour cream mixture, spices and pickle juice. Cook for a few minutes longer. NOTE: I used one cup here. The original recipe called for 2, so if you want more add more but I thought 1 cup was plenty. Adjust your seasonings to taste. Pickles have varying degrees of salt content, so add what you think works best for you.
And here's the finished soup.
I made this last night, and as with most soups it tasted better the next day. One of the things I was worried about was how well the soup would reheat in the microwave. I nuked a bowl while on my lunchbreak and it was perfectly fine. Overall, I really enjoyed this soup and it is something I will definitely make again. Most of the time I have all the ingredients on hand anyway, so no trip to the store was needed. This made enough for my wife and I to eat for two nights. Thanks for looking.
