Still in the early stages of planning. After a lot of thinking about what kind of smoker to build, I have decided to go with a rf trailer. My plan is to find a thick pipe and cut it in half. Weld in a band in the middle to make it taller. I'm still debating on weather to build 2 and put them back to back or just build 1 wider. My thought on doing 2 would be running chicken in one and beef and pork in the other. The end result will be running a commercial truck on the weekends. A few questions I have so far.
1. Is it better to run the stack out the top or a plenum off the side lower by the food level?
2. Any advantages running rotisserie? Other than smaller door.
3. Do I insulate? I live in Alaska I don't know if I want to run in the winter of not.
I'm sure I will have more questions.
