Pinwheeled pork loin

I had a full loin so I decided to cut it in two. I pinwheeled one half and just give the other a rubdown. 

I was going to mix shredded cheddar with the cream cheese but when I found the brick of smoked Gouda in the fridge, I opted for that. Throw in some spinach, roll it all back up, wrap it in bacon, and on the smoker for about 4 hours.
