Hi all,

Brand new user here. I searches for an answer to my question but havent found what I am looking for.

My friends and I have been making and smoking our own pork sausage for many years now and it is time to build a new smokehouse. We have a wild idea of making it in a lincoln-log butt and pass style construction and I am wondering if using only pine logs would create a fouling odor/smoke given the pitch and terpenes in pines. Ponderosa pines grow abundantly here so we considered using them simply because they would be easily procured. Thoughts?
 
No it will be fine. Pitch could run out of the wood on the inside if you hot smoke, but it won't bother the meat. Some of my 2x4's did that.
