...but need to know about the slits. Can I just drill holes in the sides? How big/small? They are 9" square, 2" deep. They fit fine in my smoker.

cajun, mine is a loaf pan, but yours should work fine. I used a chisel to put holes down the sides and on the end (3 on the lenght and 2 on the ends) cover with foil with holes, pencil sized. Works great, without flare ups.
