I’m try my first crack at a ham. Have a 7 lb picnic shoulder. At what temp do I smoke it and what temp should I pull it off
Thanks
Mike

What type of smoker are you using?
Do you plan to wrap ?

I go 250-275° until probe tender. Usually around 203-205 IT.
Do NOT pull at a target temp ONLY when it probes with no resistance using a skewer or temp probe.
And be sure to post pics!
