I had to try the pickling craze on chicken.
Pack of boneless, skinless thighs in pre-mixed brine for 3 hrs

Russet sliced into wedges, EVOO and SPOG

Tried this seasoning as it caught my eye at grocery store.( wasn't impressed )

360 set at 400° flipped after 15 mins. 35 mins to 175° temp

Didn't get as crispy as wanted but ok.
I do like the extra flavor profile of the pickle brine. Will do again.

Wouldn’t have thought to try that on chicken but I bet it’s great. Looks good!

As an aside, I had dill pickle flavor popcorn this weekend and that was wild.
 
I've marinated wings in slightly diluted dill pickle juice that are great. Sometimes I'll add pickle juice to my bbq spray for pork or beef. Similar to adding cider vinegar I guess.
 
Looks good . I use pickle juice leftover from a jar of pickles , but I bet that was great . It really soaks into the meat , and that makes it hard for the coating to stick . I agree , adds good flavor .
 
i too am a fan of picklin chicken, and i too am not a fan of that cajun seasoning- ended up trying it out recently when I needed Tony's.

Pickling potatoes works, too. Great in potato salad IMO.

Had just but some hard boiled eggs in my other pickle juice :emoji_relaxed:. Kinda made sure I patted the thighs fairly dry so coating would stick. Didn't really though.

Yup . The pickle juice really soaks into the meat , then sweats out when you cook it .
Pat dry , and coat with flour . Shake it off . Let them sit in the fridge 'til the flour soaks up some of the moisture / gets tacky . Then use your coating .
What you have there looks fantastic though , and I know it taste great .
