chopsaw, is the base mortadella recipe you used "Mortadella Deutsch with peppers"?

I haven't had pickle loaf in years (haven't even SEEN it in stores) and now I want some!

Yeah . It was the " idea " I used anyway . I used the ginger , white pepper and nutmeg for the spice because that's what I had on hand , and it's about the same anyway .
If you like pickle loaf , this was spot on for the taste . Texture was good too for not being emulsified . Red pimento and sweet pickle relish .

Sherry , that was one pass through an 1/8 " plate and I used non fat dry milk as a binder . He doesn't list it . I add the liquid and the NFDM a little at a time until it gets sticky . Then I stop .

I have a chart in my "meat" folder for usage percentages (been adding to it as I find info).
