Picked up a used Globe GC512. How to refurbish it?

Hello!

Ive just picked up my first meat slicer after using my aunts 10” cabelas. Now I’m researching how to take care of this. Wondering if anyone on here has a Globe G series slicer, specifically the GC512.

1. I just picked one up for $100 and am trying to figure out why the sharpener knobs are all so tight. Maybe just gummed up over years of neglect.

1a. How do I determine if I need new sharpening stones? Looks like It’s missing a bolt on the front side sharpener.

2. I also want to figure out whats the best process to deep clean and refurbish this unit.

3. Any homemade quaternary sanitizing solution or economical products to buy?

4. How do I polish this baby up? Maybe I shouldn’t ?

5. Do I need any accessories?

Ok I went with the white mineral oil since globe uses mineral oil.

My last issue and biggest one is disassembling the sharpener housing from the base. 2 possibilities:

1. It is stuck due to the years of food and grime and potentially previously owner used vegetable oil to lube it.

2. I need to turn this brass component to “unlock” it. I doubt this though.

Any ideas to get this unstuck?

if anyone else is having the same problem, I solved it by trying different things such as 1: diy food grade penetrating oil mix of vegetable oil and acetone. Used butane torch and reapplied the penetrating oil. And then torched again.

2. Tried a stronger penetrating oil. This was flammable so I didn’t use the torch.

3. Rinsed off the flammable penetrating oil with hot soapy water then used torch to heat the stuck area really hot. *the idea here is that maybe this would loosen the food grime or vegetable oil residue if the previous owner used it lubricate.*

4. Step 3 didn’t work, so while it was still very hot, I grabbed a hammer and piece of wood that was same/smaller diamter as the brass piece and hammered it gently. That worked! *the key here is to analyze and understand how the assembly and the base functions aka how does it move?*

I haven’t worked on any meat slicers outside of my vintage Rival unit so no help with the specifics of your unit

Thanks guys for the replies - it was getting lonely in here.

I’ve actually figured out the solution. My previous reply was a summary of what I did and the last step is what resolved it. Figured it may help someone into the future.

I also did hot soapy water soaking and watched a lot of Hobart operational videos and including hour long tear down videos. Very informative and now I feel like a meat slicer technician - although my issue was rather elementary and was fixed relatively easy.

The only thing I am missing is the light bulb (no idea how to get to it) and a vintage GLOBE sticker (I think it would really tie it together). Unfortunately many emails and no answers. I hope you the best and if I can be of any help please reach out. They are beasts and work horses. Hopefully Globe can help with the sharpening stones mine just needed some mineral oil.

Thank you so much for sharing and offering to help! I went through your thread and am impressed by how well you cleaned it up!

I gave up on making mine look shiny and settled on being functional, but you’ve inspired me to clean it more! Do you have tips for cleaning and polishing? Specifically, what cleaning products to use for stainless steel components and steel/aluminum.

Some of the pieces are very grimy and I could not get it 100% clean.

ideally, I’d like to also polish it up so it looks new but don’t know what products to use to polish it and am afraid of scratching it.

Any advice would be greatly appreciated!!

Edit: I want to add that I’m fairly certain the previous owner used vegetable oil as lube which caused this black grime that’s hard to remove. Any tips for dealing with this would be appreciated!

Also a video mentions using a wire brush. I’m assuming a nylon brush for all non-stainless steel pieces. Google says to use a stainless steel brush on stainless steel but I’m worried this might cause scratches. Perhaps being as gentle as I can on stainless steel is the way to go. Plus I think the stainless steel pieces are easy to clean and the grime is only baked on non stainless steel components. Aka steel or aluminum. So if this is the case maybe I’ll stick with nylon wire brush?

Some recommended stainless steel wire brush on stainless steel and a separate stainless steel wire brush for aluminum and get a steel brush for steel.

I would not use a stainless brush on stainless, a nylon brush or toothbrush helped me get into the nooks and crannies a pile of Q-Tips too. I used this polish the metal, as I had it laying around:

and then food grade lubricant to wipe it all down with a microfiber towel:

I have been relegated to storing her outside so I bought a cart with wheels and a grill cover, I wipe her down before use and have had no issues...also i think I only used the sharpener one time and that was with the assistance of my mom who used to work in a deli. The blades keep a good edge if you're not using it daily.

Bacon slices like butter, you will be well rewarded for your work in the restoration.
