Agreed his videos as very good and he is correct on a number of things. He did, however, over cook the picanha. Barely medium because 6 min per side on the thinly cut steaks was too much. Cut then 2 fingers thick and it would have been med-rare.
 
Nice. I cooked my first one like a roast, and it was fantastic. I have another in the freezer, and I'll try cutting into steaks this time.
