I have made this a few times and never really put in recipe manager. I worked on recipe this morning. Here what I have to help. This is my favorite recipe from Eric and making this weekend. I cut recipe to 2/3. This is one I have done: picadillo

1-1/2 pounds of ground beef or Pork
1/2 of a medium onion
3-4 nice garlic cloves minced fine
2tsp. Of chicken bouillon
2 tsp of cumin
1-1/2 cups water
3 medium potatoes
2 tsp Chile powder
1/2 cup of Hatch roasted green Chile
Fresh diced tomatoes
Eggs beat with milk
Grated cheese

Let this cook and break up the meat to nice granular size.

Once the meat is brown, add small diced potatoes (reds and golds work best here) about 2-3 medium potatoes. Then add about 1-1/2 cups water and let this simmer until potatoes are firm/soft. (If water runs out just add a bite more), cook about 15 minutes.

Then add red Chile powder (about 2 tsp) and about 1/2c of Hatch roasted green Chile and tomatoes, mix well and let this reduce on simmer until water is gone and you have a nice taco filling texture

Layer the taco meat in a pan. Fill roasted green Chile stuffed with good melting cheese and nestle into taco meat. Pour Egg mixture over casserole. Cover with grated cheese to be baked until cheese is brown.
