Using the same marinade, glaze that I used in my spicy peaches thread. Pork chops instead of beef. Going low and slow. The chops are skinny and I don't want to burn the sauce. Kingsford blue, apple wood. Mini is running 220.

Looks awesome.

I like how it cooks on to the meat.

I don't know if I would add more on the plate. 
 
Man those looked great!! Gonna have to build a mini soon. With all the travelling ive been doing at work lately it would be a nice portable way to bring smoke with me anywhere.

The mini is great for traveling. We take ours everywhere! You can pack a weeks worth of charcoal in the pot! For short couple hour smokes a full basket will last for 3-4 smokes!
 
Cool!! Your love and passion for the mini has made me stop at Wally world and pick up the beginnings of a mini of my own.
