Peach Habanero PBBE

I watched a video recently from Matt @ Meat church. He did pork belly burnt ends with a peach habanero rib candy and some sweet BBQ sauce and Honey Hog rub. He cooked them right in a pan ( fat side down ) to cook in its own grease. When they get around 190-195, foil pan them with the sweet sauce and the rib candy. back in the smoker for about 45 min for the sauce to tack up ( 250 for all of it). So here we go !

definitely piques my interest. I can get Pb "strips" or whole. it seems the skin=on cube strips would be perfect. I might have to google that one. found a link to the meat church process
