Greetings, I am in CCCCCold Missouri patiently waiting the arrival of my first electric smoker. I have read the manuals online and watched about 100 hours of you tube video's to "bone up" on what I need to do to master this baby when it arrives. It is a gift from my wife and kids to help me "ease" into looming retirement. I understand the concept and know that trial and error is the best teacher but I already have questions!! When you look at the videos they explain how to cook one or two pieces of a particular cut of meat or veggies, etc. but when you look at the pictures they show the smoker jammed up with several cuts of meat and several vegetables. How do you know how long to cook MORE slabs of ribs or MORE cuts of meat than just one?

I promise not to ask silly questions once I get started!

As far as filling up your smoker with all different kinds of food.
I would start out slow & maybe do a chicken, or chicken thighs, or wings.
Kinda get your feet wet, before you dive in the deep end!
