Had some friends come up to go fishing on Wed & Thurs. They were going home on Fri an wanted to see us.So I defrosted a store bought corned beef soaked it for a few hours to get some of the salt out.

Paper towel dried it

Made some rub and coated it

Got the Pit boss set at 200°F it was holding 229°F
I can live with that,took 12.5 hrs to hit 200°F

I told my friends I made a Pastrami for them so they wouldn't eat before coming to my house

Looks great Richie, I can't wait for St. Patties day. Corned beef prices are still crazy high here.
