Pastrami Home Made 1st time

    Had to join the crowd of 1st timers.

    Started a small piece of Brisket brinning on 10/13/15

    Brine salt and jarred pickling spice plus cure #1


    I let this cool adding ice before adding the cure 1 1/4 teaspoon for 1/2 gal.

    Put meat in the bag poured the brine and let it go till 10/25


    out of the brine and rubbed


    Smoked on 10/26


    Had some sandwiches last night 10/27


    No pics of the sandwiches LOL

    They were good

    So in this pic. A grill used as a shelf, a uds looking thing that the temp probe is reading so I assume that what your cooking on. Behind it is a charcaol grill. Lower left is a propane tank. Then a floating shelf? Man i love that pic.

     now you have my attention. one of my favorites, just do not get to make as much as I would like cause Mrs OS is not the biggest pastrami fan. here on the West Coast you have to make it or all you can find is what they (commercial) think is pastrami...

    That shelf has a cover keeps paper towels dry,the UDS is my big Mini,the Floating Shelf I like that LOL Thanks for the point I appreciate it

    Tom I have made these from store bought Corn Beef,this is way better,so when you get to make it.Mrs OS may change her mind about it.Thanks for the point
