Almost posted this in the Pizza forum, but figured I'd put it here. This can be done with pork shoulder as well.

My home town of Gonzales, Louisiana is known as the Jambalaya Capital of the World. Some cooks make a 'Pastalaya' made the same way, but with spaghetti instead of rice. It's good, but nowhere near what this Genovese dish is! This is the original!

Got the recipe while looking up an Italian wine...found a link on Youtube...and chuckies were on sale for $2.77/lb. so...

This is similar ingredients to my Onion Soup but with Beef in it! This is a nice dish. Yours looks way better that the YouTube one...JJ

Thank you jcam, highly recommend the dish, just cook the hell out of the onions! I went 4 hours until the onions just started to carmelize a little...but not too much, it's a fine line to walk until they burn.

Thanks JJ! You are too kind my friend. I must confess that I did add a small splash of homemade balsamic vinegrette I had in the refrigerator (made with fresh rosemary and basil) for a little kick of herbs. It was a good decision.....
