pan for brisket

hey all,

i like the idea of collecting the meat juices and noticed how some of you do this buy using a alum tray pan combined with a roasting rack to keep the meat 'dry'.

do you think a chrome tray will absorb to much heat (therefor hinder the cooking of the meat) - safer to use thinner alum supermarket style trays ?

I would doubt it would make a difference. I would avoid earthware type of vessels, but chrome, stainless, aluminum, should be fine.
