This was a weekend for experimenting. Found this one and gave it a try. Paleo patty sausage. Interesting combination of seasonings that came out pretty doggone good.

  • 1 pound ground pork (I used a fatty loin/belly mix)
  • 2 teaspoons finely chopped fresh sage leaves
  • 1 teaspoon finely chopped fresh thyme
  • 1 teaspoon kosher salt
  • ¾ teaspoon ground black pepper
  • ¼ teaspoon chopped fresh rosemary
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon red pepper flakes
Pretty dang close to my wife’s favorite breakfast sausage. It’s the fresh sage that puts this over the top. Delicious.
