This was a weekend for experimenting. Found this one and gave it a try. Paleo patty sausage. Interesting combination of seasonings that came out pretty doggone good.
- 1 pound ground pork (I used a fatty loin/belly mix)
- 2 teaspoons finely chopped fresh sage leaves
- 1 teaspoon finely chopped fresh thyme
- 1 teaspoon kosher salt
- ¾ teaspoon ground black pepper
- ¼ teaspoon chopped fresh rosemary
- ¼ teaspoon ground nutmeg
- ¼ teaspoon cayenne pepper
- ¼ teaspoon red pepper flakes
