Okay, we had a hankering for something a bit different so I made a batch of paella. I don't think I've made this for probably two years. I actually had decided to make this sometime soon last week. Which gave me the time to order some Bomba rice, saffron and some smoked Spanish paprika. These are ingredients I don't see in stores here.
Started by browning the chicken in some olive oil.
I don't own a paella pan, nor do I have a proper lid for my 15" cast iron skillet.
Once chicken is browned I sit it to the side and deglaze the pan with white wine.
Next is onions and head of garlic.
Even more garlic.
Tomatoes.
Red bell pepper, chick peas and green peas.
At this point the rice has been in the pan for a good 10 or so minutes, I've added chicken stock and the shrimp.
Added a bit more chicken stock and the browned chicken goes back in.
Okay, the rice is cooked, the stock absorbed and the bottom well caramelized. Time to eat.
So good.
