First time I've seen this old post. It was a few months old before I joined, and ALL my attention was focused on simply learning how to use my smoker.
I've made ground all beef, 50/50 beef and pork, and all pork snack sticks. Now I'll be trying pork and pork/venison bacon.
Great post. Sure glad it got opened again.

Finally got to make a 1/2 batch out of our grass fed pork
it was easy to do just follow the instructions.
then we smoked it with kiln dried discards [hardwood maple] slow and low
for 8 hrs.
had a few people test it and so far it scored a 10 out of 10
using the grass fed pork the meat slices were a nice red color without fat lines like belly bacon
