Anyone have a good receipe they would be willing to share for an open category (not brisket, whole chickens or ribs)? I have a competition coming up in a few months with this option but I'm drawing a blank as to what I should cook.
 
how about some seafood or fish

a smoked dessert

wild game

smoked lasagna,nachos,sausages... lots to choose from..lol
 
a fattie would be a great idea, or check out some good smoked duck recipes on Txbbqman's post. the trouble there, of course, is getting duck. LOL

wild fish or game is ALWAYS a good choice!
 
How about some beef, nice tender stuff. Marinate a couple fillets, sear hard on a grill and then smoke with mesquite until medium rare. Serve some thick slices in the box with a little light seasoning and juice over the top. Maybe dress the slices, by touching them to a hot grill surface for some nice marks. I'd give you a great score
