Hello, thought I'd introduce myself. First off I'll say I'm new to the whole smoking scene, about 6 months. Just got a new Master built 30" electric smoker. I like to cook over charcoal in the summer, was hoping new unit will let me smoke later into the year. Here in south central PA it gets a little to good to nurse the charcoal along. I do mostly pork ribs and butts. Any tips for the new unit would be appreciated.
