Hey all, new to this forum and to the world of smokers. My grandfather has been wanting to build a smoke house for as long as I can remember and finally yesterday he had a friend drop off an 300 gallon oil tank to the house, which he intends to use. My grandpa being a stubborn oldschool Italian, was telling me what he wanted and I did just as he asked. He had me stand the tank up on the vertical, and cut out a door which to me so far is all fine. Then in the door he wanted me to cut out a square hole 18"x24" for a screen. I don't know much about smokehouses except for what I've seen on the Internet and I've never seen anyone do that before. But he insisted so I did it. Ill try to include a picture so you all can get a better idea. I guess what I'm getting at is will that screen mess up the smoking process?? He also wants to just put the wood pile on the base of the tank, not using a separate fire box. And for hanging the meat we were going to use black screw pipe and flanges, to hang some racks from the top of the tank. If anything doesn't sound right about what were doing or if there are any better ways I would love to hear them. Thanks in advance.

Michael, morning and welcome to the forum....   I would turn the tank over with the deep section on the bottom so the fire is farther away from the meat.... easier to get to the hanging rods too...   Your grandfather probably knows what he wants.... we could all learn something from this build...  There are many ways to smoke meats and build smokers...

I'm in for the pictures of this baby in operation.....
