LEM has dual grind heads for the #8 and #12 as well as the #22 and #32 BUT the dual grind is only available as #8 or #22 which sucks if you have a bigger grinder because you effectively make it smaller by buying the dual grind. I already had a Big Bite #8 so no big deal but basically it has a stuffing plate or kidney plate the meat goes through first, there is a two sided knife that cuts against the kidney plate on one side and against the final grind plate on the other outer plate. You can change that plate to any size you want but the inner kidney plate cannot be changed.

With this there is no need to grind twice for most things.
